This simple yet sophisticated dish can be served as a standalone or pairs well with linguine, polenta, or bread.
Ingredients
- 4 Tbs butter
- Kelp Chili Crisp
- 20 oz Weathervane Scallops
- 3 Tbs chopped basil
- Salt
- ½ sliced lemon
- 1 Tbs lemon juice
Preparations
- Thoroughly pat the scallops dry with a paper towel and arrange them on another paper towel, ensuring they do not touch each other. Place the scallops in the refrigerator for 10 minutes, then remove and pat them dry again. Season the scallops with salt.
- In a pan, heat butter over medium heat until melted and slightly foaming, then add 2 tablespoons of oil from the Kelp Chili Crisp.
- Once oil is hot and sizzling, add the scallops to the pan one at a time, ensuring they do not touch. Allow the scallops to sear undisturbed until they naturally release and form a crispy, golden-brown crust (about 2 minutes).
- Flip each scallop to brown the other side. After searing for one minute, add lemon wedges, basil, 2 tablespoons of Kelp Chili Crisp (including both solids and oil), and a squeeze of lemon juice.
- Cook for another minute, until the scallops are springy to the touch and browned on both sides.
- Remove from heat and serve immediately. These scallops can be enjoyed on their own or paired with linguine, polenta, or fresh bread.
